Whole Wheat Waffles


I got this recipe from here, but didn't have all the ingredients, so this is what I made:

  • 2 eggs, beaten
  • 1 3/4 cups milk
  • 1/4 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract (if you have mexican vanilla, this is a great excuse to use it... HEAVEN!)
  • 1 cup whole wheat flour
  • 1/2 cup flax seed meal
  • 1/4 cup all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat flour, flax seed meal, all-purpose flour, baking powder, sugar, and salt until batter is smooth.

  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

We topped this with syrup and halloween sprinkles- bit hit!

I told LeRoy I had waffles ready, so when he sat down and saw them, he looked at me with disgust and said, "Wheat waffles?" But even Mr. Picky admitted they were really good. And they were- fluffy and delicious! I actually made the batter the night before and had everything set out, so even in the before school rush, we still had a yummy breakfast.
